This time of year always brings a certain nostalgia for me. The earth itself is telling us that it’s time to slow down and enjoy the things that matter. Embrace inevitable change for the beauty it is. One of the easiest ways to slow down the tempo in my life is dusting off the slow cooker and let it do my cooking for me. Because let’s be honest, reading a book by the fire or finishing up a quilting project is just so much more satisfying than spending hours in the kitchen preparing a meal! This homemade vegetable soup is a staple in our home as the days shorten. It’s the definition of comfort food & the leftovers are a huge hit!

Homemade Vegetable Soup is Customizable
If you have picky eaters – this soup is a super way to slide in some of their “not so favorite” veggies. One of my kiddos isn’t a huge fan of pinto beans, but they don’t even notice them when I disguise them in this soup! The beauty of this homemade vegetable soup is that you can add or take away ingredients depending on what your pantry is stocked with at any given time. Pack this soup with the veggies that kids will many times turn their noses up to. There are few dishes that you can get a power packed punch of nutrition like homemade vegetable soup! Fiber, healthy carbs, vitamins, and minerals – all in one bowl! Whether you’re needing aid in digestion, bone health, or skin & vision maintenance – with the right combos of veggies you can get it all in one meal.
Ingredients:
1 lb. meat of choice (I prefer ground venison)
1 sweet onion
1 frozen bag of mixed vegetables
1 lb. potatoes
1 can fire roasted tomatoes
1 can seasoned pintos
1 can red kidney beans
Seasonings of choice

Instructions:
Brown meat – sometimes I add the onion into the meat to saute it – sometimes I don’t. Both ways work just fine.
Cut up potatoes.
Combine all ingredients in slow cooker.
Cook on high for 4-6 hours or until potatoes are tender.
Top with sour cream, chives, crackers, or your favorite cornbread.

- 1 Skillet

- 1 lb Potatoes
- 1 bag Mixed Vegetables
- 1 can Pintos
- 1 can Red Kidney Beans
- 1 can Tomato Soup
- 1 can Fire Roasted Tomatoes
- Seasonings to taste

- Brown Meat

- Combine all ingredients in slow cooker
- Cook on high for 4-6 hours or until potatoes are tender
